Roasted Asparagus, Bacon And Egg Bake

One-Skillet Wonder

I would love to be able to take credit for this delicious “One Skillet Wonder” but I cannot. Nope, I found this delicious meal in this excellent cookbook, “The One-Pot Ketogenic Diet Cookbook” by Liz Williams.

I really excited to be able to share it with you. This book is an absolute must with Keto recipes that are so yummy….that you would swear you just couldn’t lose weight eating any of these great recipes……but you know what? You absolutely will!

What You Need

Cast Iron Skillet

12 uncured bacon slices

16 to 20 asparagus spears, ends snapped off and discarded

salt

8 large eggs

1 avocado sliced

Prep-time 5 minutes Cook-time 20 minutes serves 4

  1. Pre-heat the oven to 425F.
  2. In a large cast-iron skillet over medium heat, cook the bacon. Turn the slices with tongs every few minutes and cook until the bacon is 75% cooked 5-7 minutes. Transfer to a paper towel-lined plate.
  3. Drain the bacon grease from the skillet and discard, leaving 3 tablespoons of bacon fat in the pan. Add the trimmed asparagus spears to the skillet, season with salt and pepper, and toss until coated with fat.

4. Bake in the oven for 6-8 minutes, or until the spears start to soften. Remove from the oven and turn the asparagus with tongs. Return the bacon to the skillet. Crack the eggs over the top of the bacon and asparagus.

5. Return the skillet to the oven and bake for 5 to 7 minutes, or until the eggs reach desired doneness.

6. Serve immediately with avocado slices.
